Stumbled upon the easiest sexiest breakfast morsels conceivable by man.  Take a mini muffin tin; line walls with a strip of bacon; crack in an egg; bake for 20 minutes.

 

How am I 33 and I’ve never done this??

I always add a little something to whatever I cook so I put a fine layer of maple habanero pepper on the bottom of the tin and on the bacon which carmelized nicely and added some sweet, smokey, and spicy flavors and sprinkled the egg with parsley, salt, and cracked black pepper before baking at 375 for about 20 minutes.  The bacon got nicely crisped and flavored the egg beautifully, but the yolk was a little more done than I would have liked. all the same, though, i’d rather a lightly done yolk than soggy bacon. My project now is to find the perfect temp/time combo to achieve bacon and egg cup nirvana of crispy bacon and a runny yolk. #science

 

To finish, I drizzled these bad boys with some maple syrup and spicy ketchup. Sweet, savory, spicy, smokey, eggy, and absolutely delicious.

 

What a way to start the day.
